Chocolate Peanut Butter Protein Oats



Ingredients (serves 1)

~1/2 cup of rolled oats

~1/2 cup of filtered water

~1/2 cup of coconut milk

~1 scoop of chocolate protein powder (my favourites are Happy Way, Nutra Organics & The BeautyChef)

~1 teaspoon of cacao powder

~1 tablespoon of natural peanut butter

~sprinkle of cinnamon

-1 teaspoon of chia seeds

-dollop of yoghurt of your choice (I like vanilla or banana yo-pro or Jalna organic vanilla)

~topping suggestions: half a banana, raspberries or a sprinkle of sesame seeds


Method

  1. Add oats, water & coconut milk into a small pot & bring it to boil over the heat. Once boiled turn down the heat to let it simmer, put the lid on and stir occasionally until the oats are nice and soft

  2. Stir in the cacao, cinnamon & protein powder & then spoon the mixture into a bowl

  3. Top the warm oats with fruit, a dollop of yoghurt, peanut butter & chia seeds or topping of your choice. I don’t add sweetener as the addition of the yoghurt is sweet enough but if needed drizzle some honey or maple syrup to your liking!

What’s good about this recipe:

~oats contain a special type of fibre called beta-glucan which is known to lower cholesterol

-it contains a good mix of carbohydrates, protein & fats to keep you full & satiated fro longer

~research has shown cinnamon is associated with decreasing fasting blood glucose levels & blood triglycerides

~it’s kid friendly, both my 1 & 3 year old children love this recipe

-Cacao is one of the best plant based sources of magnesium

~not trying to toot my own horn but hot diggity dog it’s delicious
