Healthier Beef Nachos

My family is a huge fan of Mexican food however we rarely eat it out as it is normally incredibly heavy, loaded with cheese and not too many veggies. To combat this I make a healthier version of nachos, loaded with hidden veggies, that the whole family loves. My husband likes his nachos with beef however you can omit this for a vegetarian version and/or swap if for chicken if you prefer. I also often serve the beef mixture with quinoa or black rice and salad and have found it even works with pasta. I hope you enjoy this

recipe as much as my family does.
